Each year Major International and the Craft Guild of Chefs organise the Major Culinary Challenge and Mini Series of Display Classes. The national competitions are open to junior and senior chefs of varying skill levels from any type of outlet and take place throughout the year at venues around the country.
The Battle for the Dragon contest, which has been endorsed by the World Association of Chef's Societies (WACS), was introduced for the first time in 2006. Winners to date have been Germany, Wales, Sweden and New Zealand. The Welsh International Culinary Championships, organised by the Welsh Culinary Association (WCA), are sponsored by the Welsh Assembly Government to promote the food and drink industry brand 'True Taste'. FutureChef - The National Final - 18th March 2013
Westminster Kingsway College
Winners of each of the 12 Regional Finals will take their place at the National Final held in London. Participants will prepare and cook a two-course meal consisting of a hot main course and a hot or cold dessert for three from a specially selected basket of ingredients, within 2 hours. The National Final is a high profile and prestigious event, organised by Springboard, hosted by Westminster Kingsway College and judged by a panel of high profile and celebrity chefs.
Marks are awarded on a variety of culinary skills to include; creativity & presentation, menu balance, composition, taste & flavour and workmanship. with the coveted title of FutureChef 2013 on the line!

Following on from the success of this year's Wessex Salon - the dates for 2013 have been announced. Wessex 2013 will take place on Wednesday 3rd and Thursday 4th April 2013 at Brockenhurst College. Many of the classes will remain the same as this year so can we ask you to put the date in your diary and if appropriate advise your students to save the date too.

Chosen finalists will be allowed 2 ¾ hours to prepare, cook and present three courses of four covers. No pre-preparation by the competitor is allowed except pre washed and peeled vegetables and pre-prepared stocks/reductions.
